Chicken & Gravy Over Rice

Cream Of Chicken Soup | 1 Can | I’ve Been Using A 26oz Can (vs. 12 oz) For Additional Flavor (i.e. Salt) |
Flour | 2 Tablespoons | 2 Tablespoons / Cup Of Broth |
Onion | 1 | Cut Into Quarters |
Pepper | 1 Teaspoon | Mom’s Recipe Doesn’t Call For It But Try Adding The Pepper To The Water When You Cook The Chicken |
Peppercorns | 6 | I’ve Been Using 12 |
Salt | 1 Tablespoon | Mom’s Recipe Doesn’t Call For It But Try Adding The Salt To The Water When You Cook The Chicken |
Place The Chicken In A Large Pot & Cover It With Water (I’ve Been Adding 14 To 16 Cups) . Add The Quartered Onion (Or More), The Bouillon Cubes & The Peppercorns. Cook The Chicken Until Tender. Remove The Chicken & The Onion From The Pot & Place Them On A Platter To Cool. Strain The Broth From The Pot Into A Bowl. Measure The Broth Back Into The Pot.
To Make The Gravy, Wisk The Corn Starch & The Flour Into The Broth. Bring The Broth To A Boil Slowly, Stirring Constantly. Reduce Heat & Add The Cream Of Chicken Soup, Wisk To Remove Lumps. Chop The Cooked Onion & Add It To The Pot.
Remove The Skin & Bones From The Cooled Chicken, Chop Into Bite Size Pieces & Add To The Pot. Heat & Serve Over Rice.
Chili

Crushed Tomatoes | 2 Large Cans | |
Onion | 1 Cup | Chopped Fine |
Garlic | 2 Cloves | Chopped Fine |
Oil | 2 Tablespoons | |
Chili Powder | 3 Tablespoons | |
Salt | 1 Teaspoon | |
Paprika | 0.5 Teaspoon | |
Ground Red Pepper | 0.5 Teaspoon | |
Kidney Beans | 1 15 oz Can | Drained |
Sauté The Onions In The Oil Until Soft. Stir In The Garlic & Cook For 1 Minute. Add The Ground Beef & Cook Until Brown. Drain Off The Excess Fat. Add The Crushed Tomatoes & Stir In The Seasonings. Bring To A Boil. Lower The Heat & Cook Slowly For A Hour. Add The Kidney Beans & Cook An Additional 10 Minutes.
Fried Rice

Cooked Rice (Cold) | 2 Cups | Remember 1 Part Rice to 2 Parts Water When Cooking The Rice |

Soy Sauce | 1 – 2 Tablespoons |
Fry 4 Strips Of Bacon. Remove The Crisp Bacon & Dump The Cooked Rice Into The Hot Grease. Add The Rice (If You Didn’t Let The Rice Cool It’s OK) & Cook w/ The Grease For A Few Minutes. Stir In The Green Onions & Salt. Make A Hole In The Middle Of The Rice & Dump The Whipped Egg Into It. Partially Cook The Egg & Mix It Into The Rice. Crumble The Bacon & Stir It In w/ The Soy Sauce.
Meatloaf

Mix It All Together, Bake @ 350 F For An Hour. Enjoy Hot Or Cold.
Pizza
The Crust

Yeast | 1 Tablespoon | |
Hot Water | 1 – 1.5 Cups |
Mix The Ingredients In A Bowl. Turn The Dough Out On A Floured Board & Knead Slightly. Set In A Bowl & Cover w/ A Towel. Let The Dough Rise 6 – 8 Hours. Divide Into 4. Roll Out The Dough Balls. To Store The Crusts, Precook them At 450 F For 5 Minutes.
The Sauce

Simmer Ingredients In The First Group Until Brown. Add The Tomato Paste, The Water & The Sugar. Cook For 10 Minutes On Low. Add The Tomato Sauce & Cook For An Hour On Low.
The Toppings

Apply The Sauce To The Crust. Dad Always Added Additional Oregano & Basil For Flavor. Layer w/ The Sliced Provolone & Mozzarella Cheeses. Cover w/ The Shredded Parmesan & Add The Pepperoni. Bake Completed Pizza & 450 F For 15 – 20 Minutes.
